Observation (CORRECTED DURING INSPECTION): Internal Temperature of buffalo-chicken bites registered 38°C at the time of inspection. Bites were not in the process of cooking/reheating. You must ensure that all products on the roller grills are heated/cooked to at least 74°C internal temp before holding them hot at 60°C/180°F setting for cooking & 150°FC for hot holding.
