Observation (CORRECTED DURING INSPECTION): Commercial dishwasher was run many times during inspection. Initially, no sanitizer was being dispensed. After priming, some sanitizer was being dispensed (as seen visually through green tube) however the sanitizing rinse on the dishes was measured at 0 ppm (<10ppm). A technician has been called. A white residue is noted on the machine as well.
Corrective Action(s): Immediately sanitize dishes and utensils by hand in a sink after they have been washed and rinsed in the dishwasher. Do this by immersing in a chlorine solution of 100 ppm chlorine for 2 minutes (they are doing this now). The dishwasher must be able to provide a final sanitizing rinse of 50 ppm (measured on the rinse water on the plate or utensil). Correct as soon as possbile. Clean and maintain dishwasher as discussed.

Corrective Action(s): As noted above, the dishwasher is to be working properly to properly clean and sanitize all dishes and utensils.

Observation: Bar cooler used to store whipped cream is keeping a temperature of 6 C.
Correction: Provide an accurate indicating thermometer and make sure that the whipped cream and all dairy in the bar cooler are kept at 4 C or colder.
Comments

Walk in cooler shelves have been replaced with stainless steel shelves and the walls have been re-surfaced - good.
The wooden post is to be painted so it is easy to clean.
