Hot holding is > 60 Celsius. Soup and Donair hot holding tested.
Donair preparation discussed; Second step cooking is done on grill before transfer to hot holding. Donair cooking temperature is never turned down once donair starts cooking. Good.
Hand sink is stocked and working.
No sign of pests.
Dishwasher reaches over 77 Celsius at plate level.
Bleach sanitizer in use 100 ppm.
