Observation: Soup cooling in large bin placed on counter to cool 2 hours prior to inspection measured 35C at the time of inspection.
Corrective Action(s): Ensure that cooling foods are cooled from 60 to 20C within 2 hourse, and then 20 to 4C within another 4 hours. This soup was rapidly cooled withing 15 minutes to 20C and then place in the walk-in cooler.

Observation (CORRECTED DURING INSPECTION): 1. Glass washer iodine measured 100ppm at the time of inspection (maximum allowable is 25ppm).
2. Bleach mixed with soap for sanitizing food contact surfaces.
Corrective Action(s): 1. Do no use glass washer until iodine can be confirmed to be within 12.5 to 25ppm.
2. Ensure wash and sanitize steps are separate. Bleach solution should be made without soap (100ppm).
