Observation (CORRECTED DURING INSPECTION): 1) Food scissors (for packaged food) and container storing scissors and tongs for the hot-held beef and pork were noted to have food debris on them, although staff stated they were cleaned and sanitized after each use.
2) Rice scoops were stored in room-temperature water (measured 19C) in between uses.
Corrective Action(s): Ensure to clean and sanitize all in-use utensils and containers after each use. If cleaning and sanitizing at least every 2 hours, there must be proper time-tracking available (such as timers, logs, stickers, etc.) and the utensils must be stored in ice water.
Staff washed and sanitized all in-use utensils and containers at time of inspection.

Observation (CORRECTED DURING INSPECTION): An empty sanitizer pail was stored in the hand washing sink in dishwashing area.
Corrective Action(s): Do not store anything inside or in front of hand washing sinks, as they must be easily accessible and unobstructed at all times.

Observation: Large foam sheets are being used to cover the top of the front prep coolers at the end of each day.
Corrective Action(s): Discontinue this practice and remove foam sheets from facility. All equipment/food contact surfaces must be easily washed and sanitized. Foam cannot be washed and sanitized.

- Routine inspection.
- All hand washing stations were equipped with hot and cold running water, liquid soap, and paper towels.
- Quat-based food-contact surface sanitizer available in designated spray bottles and from dispenser at 200 ppm. Test strips available for monitoring. *Ensure all wiping cloths are stored in your Quats sanitizing solution in between uses, and change the solution every 2 hours or sooner if visibly dirty. Obtain additional sanitizer pails for each area if needed.
- High-temperature dishwasher reached 71C - 72C at the dish surface during final rinse cycle. OK - minimum of 71C required at the dish surface. Dishwashing temperature log available and up to date.
- Hot-held food items (bulgogi beef, spicy pork, rice) measured 60C or hotter.
- All coolers measured 4C or colder.
- Freezer measured -18C or colder.
- Accurate thermometers available. Temperature logs available and up to date.
- Good food storage practices noted.
- General sanitation is good.
- Pest control in place. No signs of pest activity noted at time of inspection.
- Staff onsite had valid FoodSafe certification.
