Observation (CORRECTED DURING INSPECTION): Handwashing sink in serving area found to be missing papertowels.
Corrective Action(s): Operator replaced papertowels in dispenser during time of inspection.

Observation (CORRECTED DURING INSPECTION): Ice machine scoop was found in ice.
Corrective Action(s): Ice scoop must be stored in sanitary manner as discussed during time of inspection with operator. Operator removed scoop from the ice machine.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Kitchen shelves have exposed wood finishing. All shelves must be easy to clean material and finished appropriately to allow easy cleaning and sanitizing.
Corrective Action(s): Replace or finish these shelves so they are easy to clean.
This should be completed by april 15, 2018.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Light in walkin cooler is not very bright. Lighting must be brighter to help facilitate easier cleaning under the hard to reach areas (ie. shelves).
Corrective Action(s): Install new lighting fixture or a brighter light in the walkin. This must be completed by April 15, 2018.

Comments

Routine inspection.
Handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
All coolers are 4c or below.
Freezers <-18c.
Hot holding at >60c. Rice found at 64c during time of inspection.
All foods are being stored off the floor.
Dishwasher reached 75.1c at dish level for rinse cycle.
Bleach water sanitizer at 100ppm concentration.
Employees observed to have proper protective wear (ie. aprons, hair restraints & uniforms)
Overall sanitation throughout facility is adequate.
Pest control is in place.
No pest activity noted during time of this inspection.

The following requires operators attention:
1. see above noted violations.
2. Ensure all coolers are cleaned and sanitized regularly. As discussed during last inspection, implement a cleaning schedule that can be followed for all deep/thorough cleaning of kitchen facilities/equipment.
3. Install a liquid soap dispenser in bar area for handwashing sink.
