Observation (CORRECTED DURING INSPECTION): Low temp dishwasher noted at 0 ppm chlorine after the final rinse.
Corrective Action(s): Ensure dishwasher is sanitizer with 50-100 ppm chlorine after the final rinse. If the dishwasher is not functioning properly then a manual sanitizing step must be added in the 2 comp sink. Soak dishes after washing in 100 ppm chlorine solution for 2 minutes then air dry.
*Operator already does this practice with specific equipment and will extend this practice to all dishware until the dishwasher is functioning properly.
