Premises is very clean. No obvious signs of pest.
Temperature of refrigeration and freezer units are satisfactory.
Sanitizer is available
Handwashing stations are stocked with soap and paper towel.
Ensure pouches of pre- made sauces in the self served cooler/freezer are labeled with ingredients and in accordance with CFIA labelling requirements (e.g., chicken gravy, mac and cheese sauce..etc). The intent of the requirement is to help protect those with food allergies and maintain traceability.
Pre-made pepperoni sticks and sausages must be shelf stable to air dry safely at room temperature. Shelf stable means :1) pH 4.6 or less or, 2) Aw of .85 or less or, 3) other acceptable combination such as pH 5.3pH and Aw .90. Operator stated that they have confirmed this with the manufacturer.
