Observation (CORRECTED DURING INSPECTION): * Several wiping rags were found on counters in kitchen from day before and in unsanitary condition; wiping rags to be stored in sanitizer between use or to be laundered-- but not left on counters as this is unsanitary practise
Corrective Action(s): * Ensure all wiping rags stored in sanitary manner (eg. in sanitizer between use) and not left on counters in unsanitary manner

Observation: * Food contact surfaces were found to be unclean and premises had just opened so surfaces had been left from night before; operator told to clean/sanitize immediately before preparing any food; also, food equipment had been left on prep tables and counters and not in sanitary manner-- operator reminded to organize food equipment and clean food areas after use and maintain in sanitary condition
Corrective Action(s): * Ensure all surfaces and food equipment in sanitary condition prior to handling/preparing food; ensure cleaning done after completing food preparations, etc.

Comments

* Operator to properly close up ceiling tile area where exposed; use proper ceiling tile that can be removed easily for access to ceiling
* Dishwasher final rinse was 74'C/165'F or hotter internally (at plate surface); continue to monitor and check daily with thermometer to ensure proper rinse temperature maintained
* Note: wiping rags to be stored in sanitary manner between use (eg. in sanitizer between use)
* Note: cleaning to be done prior to food preparations and food handling so that food contact surfaces are cleaned/sanitized prior to use
* Continue with cleaning/organization to maintain premises in sanitary manner
