Observation: Servery cooler temperature was measured to be 7-9C in the front area and -0.1-0.2C in the very back.
Corrective Action(s): Operator had moved all foods from this cooler to a working one. Repair the servery cooler so that it is capable of maintaining temperatures of < or = 4C uniformly. Date to be completed by: February 21, 2018

-Kitchen (1st floor) and servery area (2nd floor) inspected
-General sanitation is good
-All hand washing stations are supplied with hot and cold running water, liquid soap, and paper towels
-Coolers (walk-in, stand-up) at < or = 4C
-Freezers (walk-in, stand-up) at < or = -18C
-Thermometers available in coolers and freezers
-Hot holding units not in use during inspection. Ensure these are capable of maintaining > or = 60C.
-Temperature logs available and maintained regularly
-Low temperature dishwasher in use. Chlorine concentration reached 50 ppm at the plate level during final rinse.
-Three compartment sink available for manual dishwashing
-200 ppm Quat sanitizer available in spray bottles throughout facility. Test strips available.
-Food is labelled and protected from contamination
-Dry storage is well-maintained
-Ice machine is clean. Ice scoop is stored separately
-Chemicals are stored separate from areas of food prep and storage
-No signs of pests observed during inspection
