205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 4 cartons of eggs placed by the grill for breakfast rush. Top two layers of eggs had internal temperature ~27'C. Pictures taken. Kitchen staff had advised the eggs were already there at the beginning of her shift at 10:00am. Inspection conducted at 11:50pm. Top two layers discarded at this time. Bottom two layers were taken out just ~15 min before the inspection and had internal temperature ~6'C. These two cartons of eggs were moved back to walk-in cooler at this time.
Corrective Action(s): Ensure to take small amount of eggs each time to last for 30min-1 hour for breakfast rush. Do not take too many eggs out at once. Eggs placed at room temperature for more than 2 hours must be discarded, and NEVER placed back in cooler.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): When asked how the prep surface/cutting board on prep cooler, kitchen staff had advised the board was washed through the dishwasher at the end of the day and sometimes morning and night. Staff was advised to sanitize all prep surfaces at this time.
Corrective Action(s): Ensure all prep surfaces are sanitized after each possible contamination, and every 2 hours during operation, NOT ONLY before initiating any food prep in the morning and at the end of each shift.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Low temperature dishwasher had 0ppm chlorine dispensed during final rinse. Chlorine sanitizer bucket was empty, hence replaced to a new bucket at this time. Staff had advised the sanitizer level was not checked this morning. Tube was primed by the health inspector and >50ppm chlorine was finally achieved at the plate level after final rinse. All dishware washed this morning taken back to the dishwashing area to be rewashed at this time. - CORRECTED DURING INSPECTION
2) None of the QUAT sanitizer buckets had QUAT. Dispenser at the back dispensing 0ppm QUAT. All buckets and spray bottles were manually filled with 200ppm QUAT at this time. Large bottle of QUAT solution prepared at this time for tomorrow's use. Test strips provided at this time.
Corrective Action(s): 1) Ensure to check the sanitizer level on a regular basis. Whenever the sanitizer is changed, ensure to prime the tube first to remove any air bubbles inside before placing the first load, as instructed at this time.
2) Ensure the dispenser is repaired. Until then prepare 200ppm QUAT or obtain household bleach and add 1/2 tsp of bleach per 1L of water and use either of them as the sanitizer. [CORRECT BY: Thursday, March 8]

Observation: Ice scoop placed directly above the ice machine. Repeated violation.
Corrective Action(s): Ensure the scoop is placed in a sanitized container, NEVER directly above the machine to avoid cross contamination of ice.

Observation: Fruit flies in the dishwashing area. Strips place on ceiling.
Corrective Action(s): Ensure to keep monitoring the situation. Change the strips.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Cooler drawers below grill repaired recently, but still not in good working order. The top two drawers still require to be lifted for the bottoms drawers to close properly. Temperature of food inside is currently not affected.
Corrective Action(s): 3 months were given during the last routine inspection to have these drawers repaired, or otherwise Violation Ticket was to be issued. Ensure the drawers are repaired properly this time. Last warning. [CORRECT BY: 1 month]

Routine inspection conducted:

-Handwash stations adequately supplied throughout.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
-General food storage practice satisfactory. Storage room satisfactory.
NOTE: Receiving delivery at the time of the inspection. Ensure the walk-in freezer is organized properly after.
-General sanitation satisfactory but could be improved by cleaning hard to reach areas on a more regular basis.

Inspection report was discussed to owner on phone. Follow-up inspection will be conducted on/before Thursday, March 8th, 2018.
It is owner's responsibility to have this report read / understood and discuss with staff.
