Observation (CORRECTED DURING INSPECTION): Two QUAT bottles available for the bar had 0ppm QUAT. Both bottles refilled with 200ppm QUAT at this time.
Corrective Action(s): Ensure 200ppm QUAT is available for use at the front at all times. Do not store other cleaning solution in these bottles.

Observation: Droppings observed from floors underneath dishwashing area. Pictures taken at this time. No droppings were observed from other areas at this time. Recent pest control report checked at this time.
Corrective Action(s): Ensure the droppings are removed every morning and monitored on a daily basis.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures within requirement; Hot-holding temperatures within requirement.
NOTE: Ensure to keep the lid of sandwich prep cooler closed when not busy.
-Temperature monitoring system in place. Records kept up to date.
-Coffee creams for the bar stored on ice. Good.
-Good cooling practice observed at this time.
-Good food storage practice observed throughout.
-High temperature dishwasher achieved 73.4'C at the plate level after final rinse.
-Glasswasher achieved >50ppm chlorine at glass level after final rinse.
-200ppm QUAT available in a labelled spray bottle in kitchen.
-Ventilation canopy hood serviced and maintained.
-Ice machine satisfactory. Back storage room satisfactory.

General maintenance and sanitation satisfactory. However, floor underneath and sides of grill/fryers could be cleaned on a more regular basis to improve the sanitation level.

Discussed with the Kitchen Manager regarding pest issues at this time. Started observing droppings during winter months. Contacted professional pest control company to have 2 inspections per month. Noticed improvements since. Hole behind dishwasher filled and door sweep for the back door replaced 2 weeks ago. Good. Ensure to monitor every morning and remove droppings if observed. Disinfected all affected areas using 1000ppm chlorine solution (20ml bleach / 980 water).
