*General sanitation satisfactory. No pest issues observed during inspection.
*Quat sanitizer available at 200ppm in spray bottle. Ensure bottles are made available at the front and back sections of the kitchen. Also ensure any cloths that will be used multiple times for wiping counters are rinsed and then soaked in this solution between uses.
*Tools and utensils maintained in clean condition.
*Hand sinks equipped with warm water, liquid soap and paper towels (including in both customer washrooms).
*All cooler and freezer temperatures satisfactory.
*High-temperature dishwasher provided a final sanitizing rinse temperature of > 71 C at the plate level.
*Staff hand washing and glove use practices satisfactory.
*Organization of food in coolers satisfactory. All food stored off the floor and protected from contamination.
*Ice machine maintained in clean condition.
