Observation: Sandwich preparation station measured 11.6°C at time of inspection. Products on top level used within 2 hours.
Corrective Action(s): Please ensure unit is closed when not in use. Do not use sandwich prep cooler to store warm (20°C) chicken. Chicken must be cooled prior to putting in cooler. 60°C-20°C in 2 hours, 20°C-4°C in 4 hours.

Monitor unit to ensure it can maintain temperatures of 4°C or less. If unit cannot maintain these temperatures, discontinue use and contact refrigeration technician to have unit serviced.

Observation: 1. 4 door freezer unit currently holding temperatures of 0°C. Operator stated they are awaiting replacement of conductor. Estimated to be replaced this weekend.
2. Mechanical dishwasher not turning on.
Corrective Action(s): 1. Once repairs have been made for unit, ensure unit can maintain temperatures of 18°C or less. Maintain temperature logs
2. Contact service technician to have unit serviced. Unit must reach temperatures of 71°C at place surface. As a temporary measure, staff is to switch to 2 comparment sink hand washing method.
Wash/Rinse in one sink compartment, sanitize (1/2 tsp unscented bleach / 1L water) in 2nd compartment. Equipment is to be soaked for 1 minute and left to air dry.

No pest activity observed at time of inspection
FoodSAFE level 1 trained staff (operator) on premises during inspection
