*Main sandwich line cooler was measured at an internal temperature of 4 C during inspection. Note: operator stated this unit required no servicing. Potentially hazardous foods can now safely be stored in this cooler. Ensure unit maintains food at a temperature of 4 C or colder. Ensure top covers and doors are kept closed as much as possible.
*Note: food was placed back in this cooler prior to reinspection. Ensure directions in reports are followed in future.
*Discussed suitable food portioning containers with owner/operator during inspection. Ensure only food containers designed for reuse are used more than once.
*Note: front display cooler has been set to operate at a temperature above 4 C. Only non-perishable pastries, water and similar goods are to be stored in this unit. Ensure almond milk is not stored in this cooler.
*Probe thermometer to be available on site by the end of today (2nd August 2017). Discussed cooking temperature checks with operator during inspection.
