Observation: -Noted rodent dropping mostly on floor behind equipment and along the walls.
-Noted a small mice caught in glue traps

Corrective Action(s): -Clean all area and monitor
- Discard and put more traps
-Increase pest control visit to at least once per week. Submit a copy of new contract to the attention of the area inspector via email.

Observation: -Noted some broken tiles, and damaged wall in several areas ( dishwashing room..)
-All doors to kitchen and servery require weahter strippinig to prevent rodents
Corrective Action(s): -Repair all broken tiles, walls and seal all point of entry for rodents.

Comments

-Kitchen manager on site. Staff are either certified with FS training or being scheduled for training now.
** Covid patients currenty- No use of dinning rooms at the moments, disposable utensils are being used for residents.

-Sink and surface sanitizer is being used along with bleach
-Temp of coolers and freezers are satisfactory ( <4 oC , and <-18 oC)
-Temp of hot holding units > 60 oC
-Low dishwasher chlorine concentration is> 50 ppm
-Foods are properly covered in coolers and freezers
-Foods are labelled with used by date:
** Ensure to discard foods that are exceeding used by date - do not keep them in cooler.
-Log sheet on site and up to date now
-Staff are following good personal hygiene (wearing hair net, clean aprons) at time of visit.
-All dishware are being store in sealed bin at the end of day, all food products are protected
- All surfaces are being sanitized after work and in morning before start of any food prep.
-Ice machine are being washed and sanitized every month

** Fruit flies noted in kitchen, storage room, dishwashing area. Ensure to address the issue ( discuss with pest control)- recommend cleaning all drains and pour diluted bleach solution
