A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -18C or colder; hot holding units 60C or hotter; thermometers present; and temperatures recorded daily.
- All hand sinks had running hot and cold water, liquid soap, paper towels. The hand sink by the "Kitchen Vegetable freezer" was in working order, hot water was exiting the faucet.
- High temperature dishwasher had a rinse cycle temperature of 71.9C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in 3-comp sink had 200ppm strength.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups (veggies, dairy, protein) with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves or racks.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy system has been professionally cleaned and the next service is due in March 2020.
- No signs of pests. Noticed a couple of "dry food moths" in the monitoring trap, however the trap is 6 months old. It is recommended that a new monitoring trap is used, to determine if there is any new activity. If new moths are caught, a new trap should be placed out to determine the number and frequency. Check for webbing in low activity areas, this could be a sign of concerns for "dry food moths"
- No broken or damaged equipment, utensils, containers, lids or dishware found.
- FoodSafe certified staff present.
