Met with owner and we discussed the following: - raw eggs need to be stored on the bottom of the cooler and all ready to eat food to be stored above - all coolers to be provided with an accurate thermometers. - daily temperature log to be up to date for cold and hot holding equipment. Hot holding units - above 60C High temperature dishwasher reached 82C at the final rinse. Bleach used as approved sanitizer
