Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods (curries, appetizers, cut raw vegetables, raw meats) in walk-in cooler noted at 13C. Potentially hazardous foods must be stored at 4C or below to prevent the growth of pathogenic microorganisms and the production of toxins. Operator moved noted foods to a cooler capable of storing potentially hazardous foods at 4C or below. Walk-in cooler must not be used to store perishable foods until it is serviced or replaced.

Observation (CORRECTED DURING INSPECTION): Ice cream, chickpeas, and curried meats noted in standing freezer and 2 prep coolers were uncovered at the time of inspection. Scoop was found in chutney container in walk-in cooler. Foods in dry storage area (rice, flour) were uncovered without food-grade lids. Operator to ensure foods in cooler units and in the dry storage area are covered to prevent contamination. Scoops must be stored in clean containers or with handles facing up. Dry storage foods must be stored in pest-proof containers to prevent the attraction of pests.

Observation: Screen on screen door not affixed to screen door. Gaps observed above and below screen door.
Corrective Action(s): Operator to ensure screen door is maintained in good working order. Back door must be closed at all times until screen door is serviced or replaced to prevent pest entry.

Observation: Debris and build-up noted underneath kitchen units, in the dry storage area, and in hard-to-reach areas underneath equipment. Mice droppings noted behind cook line units and in the dry storage areas.
Corrective Action(s): Operator to ensure noted areas are cleaned and sanitized to prevent build-up. Mice droppings must be removed and noted areas sanitized with a dilute bleach solution at 100ppm. Premises must be maintained in a sanitary condition to prevent the attraction of pests.

Coolers (prep cooler, large stainless steel prep cooler) noted at 4C or below.
Freezers (2-door standing unit, 3 chest units) noted at -18C or below.
Ice machine noted in sanitary condition. Operator to ensure ice scoop is stored outside unit in a clean container.
Sanitizer bottle noted at 200ppm chlorine. A dilute bleach solution can be made using 1/2 teaspoon of 5.25% unscented bleach to 1 liter of water. Solution can be sprayed onto a clean surface and allowed to air dry.
Handwashing sinks equipped with hot and cold running water, liquid soap, and single-use paper towels.

Operator to ensure temperature logs for all coolers and freezers are maintained daily.
