Observation: A new commercial deep fryer with a built in grill was added without prior health approval. It has a built in ventilation hood.
Corrective Action(s): The following action must be taken within two weeks:
-Provide documentation on the new piece of equipment.
-Submit an updated menu.
-Provide an updated Food Safety Plan for the new menu items and Sanitation Plan for updated cleaning procedures.
-Indicate where the additional food that is going to be prepared will be stored.
Note that submission of the plans does not guarantee approval. Failure to send in the required information will result in enforcement action being taken.

Observation: Single use salad containers were observed to be used for storing chicken and other foods.
Corrective Action(s): Discontinue the practice of re-using single use containers. Purchase food grade containers for storing food. Handout on acceptable "Food Grade Containers" provided during the inspection.

Comments

-Ensure that all foods stored outside of refrigerators and kept in sealed, pest proof containers.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
Invoices available for the fish on site.
No evidence of pests.
Hand sinks supplied with hot and cold water, soap and paper towels.
The dishwasher's final rinse cycle reached 74 C at the plate level.
General sanitation was satisfactory.
