Routine inspection conducted and the following were noted:
All cooler units less than or equal to 4C and equipped with thermometers.
Freezer units at -18C.
High temperature dishwasher achieved a final rinse temperature of at least 71C at plate level for multiple cycles.
All food items stored at least 6 inches off the ground and properly covered.
No pest noted.
Hand washing stations satisfactory.
Quats dispenser at 200ppm. Quats test strips available.
General sanitation level is good.
No hot holding at the time of inspection.
Reviewed cooling process with food service manager. To help speed up cooling, transfer liquid food products into shallow metal pans after the food product is cooked. The food product should place be placed into a cooler unit while being stored in the shallow pans.
