Comments

- General sanitation is satisfactory.
- All handwashing stations supplied with cold/hot running water, soap, and paper towels.
- Three compartment sink available for manual dishwashing. QUAT sanitizer available at 200ppm concentration. Ensure to follow the proper manual dishwashing procedure: 1) wash 2) rinse 3) sanitize 4) air dry.
- Surface sanitizer available in spray bottles at 200ppm QUAT solution.
- Dry storage area has adequate space. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity at the time of the inspection.

Temperature control:
- The deli display cooler was measured initially at 8C at the time of the inspection. Keep the doors closed and ensure that the cooler maintains temperature < 4C at all times.
- All other coolers measured at < 4C.
- Upright freezer at < -18C.
- Hot holding units measured between 67C-80C.
- Daily temperature logs available and kept up to date.
