- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- All temperatures meet health requirements:
* Walk in cooler at 4C or below
* Walk in freezer at -18C
* Prep/ line coolers at 4C or below
* Hot holding unit maintaining food temperatures at >60C
- Thermometers available in all cold holding units
- Temperature logs kept and maintained
- Low temperature dishwasher available, concentration of chlorine residual at final rinse at least 50ppm
- QUAT sanitizer available throughout the facility, concentration at 200ppm
- QUAT sanitizer at least 200ppm from QUAT dispenser
- Sanitizer test strips available for monitoring sanitizer concentrations
- Sanitizer logs kept and maintained
- Good storage practices being employed at facility, all foods kept covered and stored at least 6" off the ground
