Observation: Greek rice, Greek salad, quinoa salad, Greek style potato( from supplier) in display cooler - all temp abused and expired ( more then 3 days in cooler)
-Also vacuum packed sherded cooked chicken breast ( made on June 4)
Correction: All the noted foods to be discarded- any prepared foods in cooler max 2 days- freeze to extend the shelf life
Comments

Noted issues are addressed, action plan is submitted. Cooling stick is on site for liquid foods, solid foods are being cooled for a short time and using ice pack for 60-20 in <2 hr, 20-4 oC in < 4hrs and temp is to be monitored.

* No salad in display cooler, operator is not making these for now- may do it in future as pre-packaged ones.

* Temp log sheet is in process.
