Sanitizer (chlorine) measured >100 ppm.
High temp dishwasher reached 73.2 deg C at plate surface.
Walk-in cooler registered 1-2 deg C.
Walk-in freezer was at -21 deg C.
Prep line coolers were at or below 4 deg C.
Hot holding for rice was above 60 deg C.
**Ensure to re-heat left over food in microwave (to 74 deg C) and hot held at 60 deg C or above.
Bar cooler was at 4 deg C.
Temperature log was available and up to date.
