Observation (CORRECTED DURING INSPECTION): Display coolers in front area are storing cold foods above 4C. Air temperature (left display cooler): 8.8C. Air temperature (right display cooler): 6.9C. Food items were probed - egg sandwich: 10.9C, wrap: 10.6C, calzone: 12.0C. Per staff, food items have been in cooler overnight. This is a repeat violation.
Corrective Action(s): Discard potentially hazardous foods that have been stored within the Danger Zone (4C to 60C) for more than 2 hours. Staff began discarding at time of inspection.
-Do not store PHFs in display coolers until temperatures can be maintained at or below 4C. In the meantime, store foods in working cooler.

Observation: Pink mildew noted along upper edges of ice machine. Ice scoop stored inside machine with handle touching ice. This can contaminate the ice.
Corrective Action(s): Discard ice. Clean and sanitize machine. Ensure ice machine is regularly cleaned as per your Sanitation Plan.
-Ensure ice scoop is stored in a sanitary manner (ex. clean container outside the machine).

Observation (CORRECTED DURING INSPECTION): 1) Sanitizer spray bottle was not functional as spray knob was broken. Quats solution tested, measured at 50ppm. Per staff, solution is made daily.
-Staff remade sanitizer solution at time of inspection. Sanitizer bucket with wiping cloth stored inside measured at 200ppm quats.
-Ensure sanitizer solution is readily available at all times to wipe down food contact surfaces at least every 4 hours or more frequently. This is to minimize potential bacterial growth.

2) Handheld blender and stirrer were stored in standing water with coffee debris.
-Staff cleaned and refreshed container with ice water at time of inspection.
-Ensure items are stored in ice water that is refreshed frequently to minimize potential bacterial growth.

Observation (CORRECTED DURING INSPECTION): Handsink was blocked with several dishes and a blender container.
-Staff removed items at time of inspection.
-Handsinks are for handwashing only. Ensure handsinks are fully accessible for staff to properly and frequently wash their hands.

Observation: Frozen foods are being stored above -18C. Discrepancy noted between digital display and measured air temperature using max/min thermometer.

-Stand-up freezer (front): -7C (digital display reads: -23C)
Corrective Action(s): Ensure freezers are storing foods at or below -18C.
-Do not overfill freezers as this may affect storage temperatures.
-Recommend using thermometer to monitor unit temperatures. Do not rely on digital displays.

-Undercounter cooler (front): 4.7C *NOTE: Unit is used frequently. Please monitor to ensure unit is maintaining temperatures at or below 4C.

*NOTE: Temperature logs are not consistently maintained - dates are missing. Ensure staff are monitoring temperatures of equipment at least 2x per day. Recommend using thermometer to check, instead of relying on digital display of unit.

-Handsinks have hot/cold running water, liquid soap, and paper towels.
-High-temperature dishwasher measured 75.3C at plate surface.
-Food storage is satisfactory - stored food is covered and protected from contamination.
-Health permit is posted. *NOTE: Ensure newest decal is posted on permit.

-No signature obtained due to COVID-19 protocols. Report printed and reviewed with staff on-site.
