Observation (CORRECTED DURING INSPECTION): Premade sushi rolls at 22C were stored at room temperature - discarded at time of inspection. Operator had agreed that rolls will be made per order at last follow up inspection. This is a reoccurring violation.
Corrective Action(s): Ensure all cold potentially hazardous foods are stored at 4C or less.

Observation (CORRECTED DURING INSPECTION): Noted several containers of various types of tempura and one container of salmon skin at approx 23C stored at room temperature. Discarded at time of inspection. This is a reoccurring issues.
Corrective Action(s): Hot potentially hazardous foods are to be stored at 60C or higher.

Observation (CORRECTED DURING INSPECTION): Hand wash station in bar area had a bowl in it. This issue has been noted on previous reports.
Corrective Action(s): Ensure hand wash station at the sushi bar remains unobstructed at all times.

Observation: Noted light cover above hand wash station in the kitchen broken. Also noted heavy build up of grease and debris on ceiling tiles.
Corrective Action(s): Replace broken light covers and clean up grease and debris from ceiling to prevent potential contamination of foods being prepared on food counters and on cookline underneath.

All hand wash stations fully equipped with soap, paper towel, hot and cold running water. See violation code 401 re: accessibility/obstruction
All coolers 4⁰C or less (sushi display case, prep cooler, walk in cooler..etc)
Freezers all less than -18C
Hot holding of soup and rice higher than 60C
100ppm chlorine sanitizer was available at the sushi bar and kitchen area. Reminded staff to keep all wiping cloths stored in sanitizer solution when not in use to prevent microbial growth.
Ice machine appeared clean with scoop stored outside of the ice in a separate container.
No obvious sign of pest infestation noted at time of inspection. Screen was in place over open back door at time of inspection.
Overall general sanitation satisfactory. See violation code 209 re: cleaning of ceiling tiles
Stored foods appeared protected (ie. stored off the ground and covered)
Shellfish tags kept on site. Raw oyster advisory posted.
High temperature dish washer achieved 71⁰C (with thermolabel).
