-Sushi cooler was at 4C.
-Under counter cooler was at 4C (top) and 3C (bottom).
-Upright cooler (back area) was at 3C.
-Upright cooler (front area) was at 4C.
-Upright freezer was at -16C.
-Kimchi cooler (freezer) was at -8C.
-Hot holding was greater than 60C.
-Sushi rice had a pH of 4.0.
-Hot potentially hazardous foods (friend items) rapidly cooled in the walk-in freezer.
-High temperature dishwasher had a final rinse of 74C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pails and spray bottle labelled and tested at 100ppm to 200ppm.
-Sushi cutting board sanitized at least every 2 hours.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-Facility monitored by a professional pest control operator. Report for October 2019 indicated no pest activity. No signs of pests noted at the time of inspection.
-Washroon clean and well maintained.
-Operator FoodSafe Level 1 valid until August 31, 2024.
