Exhaust canopy and grease diffusers cleaned. Burned out bulbs changed in exhaust canopy Monitoring logs being maintained. ***Add final rinse concentration of the dishwasher to the monitoring log. This is to be tested and documented daily to shopw you are doing your due diligence.
