Observation (CORRECTED DURING INSPECTION): A lot of food (6-8 containers) of deep fried food being cooled on cart in kitchen for an extended period of time.
Corrective Action(s): Discussed proper cooling technique which is 60C-20C in 2 hours or less, then 20C-4C in 4 hours in the cooler. Ensure staff are reminded of the proper practice and to not leave food out for an extended amount of time while cooling

Observation (CORRECTED DURING INSPECTION): Handsinks at sushi bar and hand sink at grill station blocked by items in the sink.
Corrective Action(s): Ensure staff do not block handsinks with items and that staff are washing their hands. Gloves are not a substitute for proper hand washing.

Observation: Rodent droppings found under dry storage shelves and on bottom sheves in back hallway and by the back door.
Corrective Action(s): Clean up the droppings daily and ensure to sanitize the area with bleach. Have pest control come in to ensure holes are filled and traps are in place. by Friday March 15/24

Observation: Extensive grease, grime and food debris build up throughout the restaurant.
Corrective Action(s): Clean and sanitize the following areas by Friday March 15/24
-All the shelves where dishes are stored
-Under the dishwasher and sink area
-Storage shelves along the back hall way, under the shelves, the shelves and the wall behind especially the rice area
-all cooler doors and handles
-the rolling cart that is used for cooling food
-deep fryer area-floor and walls

Observation: Kitchen is very cluttered and staff have a hard time passing each other as there are extra shelves in the back hallway, items being stored on the floor and alot of products being stored on site.
Corrective Action(s): De-clutter and reorganize the kitchen to maximize the space, remove items that aren't needed as well as removing food from the floor to allow staff to move around and to clean the restaurant effectively. By Friday March 15/24
