Observation (CORRECTED DURING INSPECTION): Accumulation of food debris observed on the back blade guard of the deli slicer.
Corrective Action(s): Staff cleaned and sanitized the the deli slicer. Ensure deli slicer is cleaned and sanitized properly after each use.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): One sanitizing pail at the kitchen and one sanitizing spray bottle at the bar measured with a quats concentration of less 50 ppm. At least 200 ppm is required for properly sanitizing food contact surfaces and utensils.
Corrective Action(s): Staff dicarded and refilled the spray bottle and pail with 200 ppm quats from the dispenser.

Observation (CORRECTED DURING INSPECTION): Single use paper towels not provided at the bar area hand washing station.
Corrective Action(s): Supply single use paper towels at the bar area hand washing station. Hand washing stations must be provided with hot/cold running water, liquid soap and single use paper towels.

Observation (CORRECTED DURING INSPECTION): Entrance door at the kitchen was open at the time of inspection. This is a repeated violation.
Corrective Action(s): Entrance door to outside must remain closed during operation to prevent pests entry. Alternatively, A screen door must be installed if operator wants to keep the entrance door open. Correct by: 1 month

Observation: Soap dispenser at the kitchen area was not working properly.

- Vegetable cutter and ice machine maintained in a sanitary condition.
- Containers of food stored inside coolers were covered.
- Temperature records maintained for the refrigeration units and sous vide.
- Sous vide menu limited to tri-tip only.
- Food products stored off the ground and organized.
- No pest activities observed at the time of the inspection.
