Observation: It was observed that cooked and raw food in a walk -in cooler not separated properly. Also, food is not covered in the walk in cooler.
Corrective Action(s): Ensure proper separation between cooked and raw food in walk in cooler. Raw food below the cooked food. And, cover all food in the cooler.

Routine inspection

General comments:
- Hand washing stations are supplied with soap and paper towels in dispenser.
- Walk-in cooler measured at or below 4 degree C. Freezers measured at or below -18C.
- Sanitizer QUAT available in spray bottles. Also, bleach water is to be supplied for wiping cloths in the kitchen.
- 50-100 ppm chlorine was detected in low-temp Dish washer. Test paper available.
- 3-comp sink maintained. Cutting boards washed and sanitized using bleach.
- Meat slicer cleaning discussed. Meat thawing in prep sink discussed.
- No obvious sign of pest activity observed.

A follow-up inspection scheduled.
