Observation: Chlorine sanitizer in 3 compartment sink achieved less than 50ppm chlorine when tested with strips. No dishwashing was performed at time of inspection. Test strips for chlorine are available.
Corrective action: Ensure the chlorine sanitizer reaches 100 to 200ppm before starting dishwashing to effectively sanitize equipment and utensils.

Observation (CORRECTED DURING INSPECTION): Single use butter container observed in the pepper flake bin.
Corrective action: Removed the container and ensure durable, cleanable scoops are used for dispensing food. Store the scoop in a sanitary manner with handle extending out from food or outside the bin to protect the food from contaminants.

All coolers measured below 4 degrees C (required: 4C or less).
Freezers measured below -18C (required: -18C or less).

Sanitation:
Handsinks (front and back and in the staff washroom) were equipped with hot and cold running water, liquid soap and paper towels.
3 compartment sink has bleach for chlorine sanitizer, hot and cold running water and drain plugs available for use. ( 100 - 200ppm chlorine sanitizer required).
Sanitizer spray bottles (front and back of kitchen) achieved 200ppm chlorine when tested with strips.
Discussed cleaning and sanitizing of food contact surfaces with staff. Informed that counters and other surfaces are washed with soapy water, rinsed and sanitized with chlorine in spray bottles.
Note: Recommend cleaning the gaskets/seals of the front pizza prep cooler to maintain longevity of the gaskets.
Note: Also recommend cleaning and sanitizing the shelf where clean pizza trays are stored in kitchen.

General: Foodsafe level 1 trained staff onsite (expiry: July 21, 2023).
Walls, floors and ceilings are clean - Dry storage is well maintained and organized.
