Observation: High-temperature dishwasher measured at 64C final rinse temperature.
Corrective Action(s): Service high-temperature dishwasher to measured at least 71C final rinse temperature. Temporary use 3-compartment sink for manual warewashing until dishwasher has been serviced.. Corrected by: February 21, 2024

Observation: As per previous report#JCHYCHY-CUCS6V and NSD-CQDQGF, operator has not provided satisfactory Sanitation Plan regarding dishwaher and new equipment (Kettle, etc.). THIS IS A REPEAT VIOLATION.
Corrective Action(s): Submit updated Sanitaiton Pan on cleaning method, frequency of new equipment like pans, utensils, work table, dough mixer, kettle. Corrected by: April 1, 2024.

Routine Inspection conducted today.

Faciltiy Approved for: Catering Service with use of single-use utensils.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels. QUATs spray bottle measured at 200ppm.
3-compartment sink available.
Walk-in coolers measured at 4C or lower. Walk-in freezer and chest freezer measured at -18C or lower.
Food observed to be stored at least 6 inches off the floor. Exhaust hood vent in sanitary condition.

Following violations in previous report#JCHY-CUCS6V have been corrected:
-No exposed wood pallets observed stored in walk-in freezer.
-Unrelated items removed from premises.
-No food preparation observed at the front entrance way without handwashing sink.

Overall, facility is well organized.
