Front of house hand sink was not being used for
handwashing. Staff stated that they were using the
2-comp sink with hot hot water for handwashing.

Use the front of house hand sink to wash your hands.

Observation: OBSERVATION
Health permit was not in the premises. Staff called the
operator and operator stated that they have the 2023
decal and still waiting for the 2024 in their mail.

Corrective Action(s): CORRECTIVE ACTION
The most recent decal should be placed on top of the
old ones. The permit must also be posted in a conspicuous
location at all times.

Mouse droppings were observed in the following areas :
1. ) Shelves under the cashier counter (Point of sale)
2. ) Behind the espresso machine
3. ) Near the mop sink floor.

Clean and sanitize the droppings and the noted areas above.
Ensure to monitor for rodent activity via visual inspection of
the premises. Follow pest control company's recommendations
regarding the sanitation of the premises.

to plumbing issue. Owner stated that parts were already
ordered.

dishwasher to sanitize pots until the sink is repaired.

> Sanitation and hygiene
- Washroom and front of house sinks were adequately
supplied with liquid hand soap, paper towels, and
running hot and cold water.
- 2-compartment sink was available. Manual ware washing
was discussed with the staff
* NOTE : Purchase 2 sink plugs ; In case the dishwasher breaks
you can use the 2-compartment sink to sanitize dish wares.
- Sanitizer spray bottle had 100 ppm chlorine.
- Chemicals were properly stored
- Ice scoop maintained in a sanitary manner
* NOTE : Increase the frequency of cleaning schedule for
the ice machine to remove coffee stains
- General sanitation was satisfactory.
- High temperature dishwasher had a final rinse temperature of 71.6 C

- Hot holding unit : Foods measured between 71C - 75C
- Milk cooler measured 4C
- Display cooler measured 2C
- 1 door under the counter freezer measured -18C
