Met with Carol, Hall manager and :

- confirm status on the active files
- high temperature dishwasher ( 1 ) - reached 71C
- high temp dishwasher 2 - reached 71C at the plate surfaces
- bleach used as approved sanitizer
- Walk in cooler operates at 3C

Discussed the new commissary owner guidance document ( enclosed copy ):
- future recommendation is to keep a daily temperature logs of high temp dishwasher and equipment that are rented out ( walk in coolers, freezers )
- cleaning and sanitation schedules to have as part of the rental agreement for the commercial facilities ( not including private events )
- pest control contact
- rental agreement to be updated as per guideline
