Observation: The sanitizer bottle was empty. No chlorine residual measured at the time/in final cycle. Old chlorine bottle replaced but still no residual on the plate surface. Test strips are available and daily sanitizer concentration should be measured and recorded.
Corrective Action(s): For now, they will use 2 compartment sink that use sanitizer, quat, that has been measured at 200ppm. Wash dishes in the low temp dishwasher and sanitized in the sink with supplied sanitizer. Follow up inspection will be conducted on Thursday ( February 7th ).

Corrective Action(s): Please ensure to provide proper training to all your staff about cross contamination.

Comments

Please store all PH food in the proper, cold storage before you continuing preparing food. ( follow the FIFO principle ). Observed - received food left in the kitchen floor for sometime.
Cleaning during busy time ( inspection conducted after lunch time, around 2pm ) need to be provided.
