Observation:
Minimal food debris and stains found under shelving units in back storage area; under the backroom syrup dispensing station; under tables and equipment in the retail areas; on legs of table, equipment & shelving racks in the cooking room; and on exterior surfaces of equipment, cooler doors & handles.
Food debris and stains will attract and harbor pests.
Corrective Action(s):
Detailed cleaning of the mentioned areas to be done regularily to remove food debris and stains. Ensure staff are using the 3-steps to clean & sanitize all equipment and surfaces (wash with hot water & soap, rinse with clean hot water, and spray or soak in sanitizer).

Comments

A routine inspection was completed, the following observations were made:
- Coolers below 4C; freezers below -18C; hot holding units above 60C; thermometers present; and temperatures recorded daily. Reviewed temp logs, all in order.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- 3-comp sink for dishwashing had running hot and cold water, soap, and Quats sanitizer.
- Quats sanitizer in spray bottles were 200ppm strength.
- General sanitation is good. Improvement needed in hard to reach areas, and detailed cleaning to be completed.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rule being followed.
- FoodSafe certified staff present.
- No signs of pests. Pest control company contracted to monitor for pests (1-2 times a month).
- COVID-19 measures in place, such as: staff & patrons wear masks; signs posted on door; physical distancing markers on floor; hand sanitizer present for staff and patron use; increased cleaning of high touch surfaces; and staff health checks done before each shift.
- Discussed the results of the inspection with the store supervisor, no signature obtained due to the pandemic.
