Observation (CORRECTED DURING INSPECTION): Sanitizing pail next to gelato machine has no chlorine residual.
Corrective Action(s): Bleach was added to sanitizing pail and measured at 200 ppm chlorine residual. Ensure that chlorine residual is present in the pail at all times for adequate sanitizing of food contact surfaces.

Comments

Routine inspection conducted. Kitchen area is not in use except to cook crystal noodles as a topping for ice cream. Premise produces gelato on-site and sells directly to customers. The following observations were made:

1. Temperatures
- Walk-in cooler at 4C
- Walk-in freezers at -18C
- Stand-up gelato freezers at -18C
- Beverage cooler up front at 4C
- Crystal noodles were cooling in walk-in cooler at time of inspection at ~10C

2. Hygiene and Sanitizing
- Handwash stations in all restrooms and kitchen adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizing pail in front service area for ice cream has 200 ppm chlorine residual
- Low-temperature dishwasher releases approximately 100 ppm chlorine residual
- Gelato machine is disassembled, clean-in-place, rinsed with hot water, and then run through with Diversol (chlorine-based) hard surface sanitizer
- Restrooms are in good sanitary condition
- Utensils in sanitary condition

3. Storage
- All food items are elevated off the floor
- Dairyland Creamer bags stored in crates inside walk-in cooler
- Bulk storage items, including pistachios, sugar inside food-grade bins with tight-fitting lids
- Scoops for ice cream in front service area stored inside running dipper well - good

4. Administrative
- Operator has FoodSafe 1 (Expiry: July 29, 2018 - ensure that this is renewed by August 31, 2018)
- Permit posted and up-to-date

5. Pests
- No signs of recent pest activity at time of inspection. KetchAll traps are used as part of pest control program
- Facility contracts professional pest control company to conduct routine audits. Total of 7 mice removed from Ketchall traps
- Continue to monitor for pest activity and consider more frequent inspections (e.g. twice a month) if more mice are observed

6. Future Plans
- Low-temperature dishwasher will be removed as operator no longer plans to run restaurant in facility, and will be replaced by a 3-compartment sink. An additional gelato machine has been purchased and will be placed where the kitchen space / cook line is currently located. One stove, deep fryer, and one grill will remain in cook line for the noodles
- Ensure that floor plans are submitted to the health authority and approved prior to making any changes
