Adequate supply of single-use paper towels to be available on site.

Observation: Debris and spiders noted on cleaned stainless steel food containers in storage area along hallway. DJ room noted with build-up and dust along perimeter of room.
Corrective Action(s): Operator to clean and sanitize noted wares. Food contact surfaces are to be stored in a manner which protects them from contamination after cleaning and sanitizing. DJ room and storage rooms to be maintained in a sanitary condition to prevent pest attraction.

Observation (CORRECTED DURING INSPECTION): High temperature dishwasher noted between 50.6C-54.9C (71C or 160F minimum requirement) at the plate after final rinse cycle. Dishwasher technician arrived on site at the time of inspection to convert unit into a low temperature dishwasher. Unit noted 50ppm chlorine at the plate after final rinse cycle. Chlorine test strips available on site.

No signs of pests at the time of inspection.

A dilute chlorine solution can be made using 1/2 teaspoon (2.5mL) of 5.25% unscented bleach to 1 liter of water. Solution can be made fresh daily, applied to a cleaned surface, and allowed to air dry.

Permit to be posted in a conspicuous location visible to the public.
Items not required for business use are to be removed from premises.

Floor to wall connections at 3-compartment sink must be sealed with a smooth, non-porous, and easily washable finish to encourage frequent cleaning.
