Observation: 1.Santizer bottle empty at 3 comp sink
2. Dough mixer guard has splatter of chocolate, icing and other caked on material. Equipment lubricant around the spinning mixer portion of the mixer appears to be in large black gobs and could fall into food.
3. Cake/loaf racks after use are stacked dirty on cart. Cart is filled and taken away every 3 months to be cleaned. Racks appear to have seeds and food debris left in racks after use.
Corrective Action(s): 1.Ensure sanitizer is available to sanitize dishes and available to refill sanitizer bottles at 200 ppm QUATS.
2. Ensure all equipment is properly cleaned and sanitized after use and not put away dirty. Review cleaning procedures and consult manufacturer to determine how to clean equipment without affecting the equipment lubricants.
3. Ensure all equipment/dishware/racks are cleaned after use and not stored in facility dirty. 3 months is not an acceptable length of time to accumulate dirty dishware.

Observation: Knife rack across prep cooler is screwed into wall.
Corrective Action(s): Knife rack should be adjustable so that the entire unit can be removed, and thus, washed and sanitized. Repeat violation.

Observation: -Side storage area appears cluttered - build up of boxes and extra supplies thrown on top of each other.
-Commercial dishwasher and 2 comp sink appear to no longer be in use
Corrective Action(s): This back storage area requires some attention to better utilize this space and prevent it from being cluttered. This area is difficult to clean and monitor it for pest activity in its current condition. Recommend removal of equipment no longer required and re-organize shelving.
