Comments

- General sanitation has improved since previous routine inspection. Some coffee debris (beans) noted under front service counter. Ensure this area is cleaned thoroughly to prevent any accumulation of debris.
- Handsink supplied with hot and cold water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder)
- Prep cooler 0-1C
- Sliding door milk cooler 3C
- Undercounter barista cooler 3C
- Display cooler 4C
- Dipper well in use for stirring spoons at barista station.
- Bleach solution present in spray bottle for sanitizing food contact surfaces. Concentration measured 200pppm chlorine.
- High temperature dishwasher operational. Final rinse measured 79.6C at dish surface.
- Pest control contract in place with monthly service for rodents and cockroaches. Previous two reports (March, April) were provided for review at time of the inspection. The March report stated no pest activity noted while the April report documented 2 cockroaches were found; 1 in service area and 1 in roasting area. None were noted in sticky traps (placed by Pest Control Technician April 16) checked at the time of the inspection. Continue to maintain contract with Pest Control company, increasing frequency of service if any increased activity is noted. Follow all recommendations of the Pest Control Technician and maintain a high level of sanitation.
* Room which enters from cafe seating area (previously storage room) has been converted to a cupping room. Cupping area was previously in back roasting area. Staff on-site reported it is not for the public; only for staff at this time. Handsink present. In future if cupping is used for the public (ie. drinks provided to the public), liquid soap and paper towel should be supplied for handwashing in this room. * Submit revised layout plan to reflect this change.
