Observation (CORRECTED DURING INSPECTION): 1) One container of cooked chicken was stored on the same bottom shelf as boxes of raw chicken.
2) Two metal inserts at the cook line contained in-use utensils stored in room temperature water.
Corrective Action(s): 1) Relocated container of cooked chicken onto the same shelf as other cooked items.
2) Replaced room temperature water with ice.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General cleaning for food debris is required in the following areas:
> Under the chemical storage outside the walk-in cooler.
> Under the cook line, especially at the end by the deep fryer.
Corrective Action(s): Remove food debris. Clean and sanitize the facility as per your sanitation plan.
> Food debris should be removed and cleaned daily to minimize accumulation. Accumulation of food debris can attract pests such as flies, ants, and rodents.

Observation: Several observations of aluminum foil and cardboard being used to line stainless steel shelving and counter tops.
Corrective Action(s): Remove alunimum foil and cardboard. They are not a smooth and easily cleanable surface that is suitable for a food facility.
