Observations:
- Walk-in cooler at 2'/C
- Walk-in freezer at -20'C
- Preparation coolers and drawers along cooking line at or below 4'C
- Stand-up cooler at 3'C
- Hot-held foods at or above 60'C
- All food observed stored at least 6 inches off the floor and covered
- First-in-first-out method in use
- Walk-in cooler is well-organized and maintained in a sanitary manner
- Dry foods observed stored in pest-proof containers
- General sanitation is excellent during inspection
- All hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- Chemical dishwasher measured at 50 ppm chlorine concentration with test strip at plate surface
- QUATs sanitizer in pails with wiping cloths (X3) measured at 200 ppm QUATs concentration with test strip
- Ice machine observed in sanitary condition
- Professional pest control company is contracted
- FOODSAFE Level 1 trained staff and operator available on site during inspection
- Staff observed wearing clean uniforms and hair nets

Notes:
- Walk-in cooler at very back of kitchen is not in use for perishable food storage. Cooler is observed turned off and for storage of dry items only.

Reminders:
- Ensure single-use containers are only used once. Do not double stack single-use containers in inserts of the preparation cooler. Each food item should have its own compartment to prevent contamination.
