Observation (CORRECTED DURING INSPECTION): Front undercounter cooler in the servicing area measured at 20.9C air ambient temperature. Carton of milk observed to stored in the cooler over night as stated by the operator. Stand-up cooler in the kitchen area next to the dishwasher measured at 21C air ambient temperature. Pot of soup and curry observed to be stored in the cooler holding at 21C air ambient temperature over night.
Corrective Action(s): Discard the aforementioned items. All cold potentially hazardous foods must be stored in a cooling unit able to hold an air ambient temperature of 4C or lower. Do not store any cold potentially hazardous foods the stand-up coolers not able to hold air ambient temperature of 4C or lower.

Observation (CORRECTED DURING INSPECTION): Can opener blade observed to have built-up of food debris. Cutting board used as a countertop observed to have rodent droppings.
Corrective Action(s): Clean and sanitize the aforementioned items. Can opener blade must be cleaned and sanitized after each-use. All food contact surfaces must be cleaned and sanitized.

Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher measured at 10ppm chlorine. No chlorine sanitizer buckets available in the kitchen area to sanitize food contact surfaces.
Corrective Action(s): SErvice the low-temperature dishwasher to measure at 50ppm chlorine. Prepare chlorine sanitizer bucket for the kitchen to measure at least 100-200ppm chlorine to ensure food contact surfaces are sanitized. Daily sanititation of food contact surfaces at the end of day is unacceptable. Sanitation of food contact surfaces must be done throughout the day when transitioning between different unrelated task and/or every 4 hours.

Observation (CORRECTED DURING INSPECTION): Front handwashing sink and kitchen handwashing sink nearest the entrance were observed to be obstructed with container of sanitizer, bottles and container of cardboard respectively. Back handwashing sink nearest the back door lack paper towel, liquid soap, and obstructed with containers of food.
Corrective Action(s): Ensure all handwashing sink are well equipped with hot and cold running water, liquid soap, and paper towels. All handwashing sinks must be unobstructed to ensure staff hygiene.

Observation: Rodent droppings observed to be underneath, around, and/or on the following areas:
-Front dry storage area.
-Dry storage area in the back kitchen shelving units.
-Cutting board used as a countertop to store kitchen equipment in the back kitchen area.
-Work station next to the stand-up cooler.
-Hot water tank.
-Back preparation area/storage area in the kitchen.

Operator informed that Pest Control Company is contracted only if there is a problem.
Corrective Action(s): Clean and sanitize aforementioned area. Contract out Pest Control Company bi-weekly. Review facility's Sanitation Plan and follow daily/weekly sanitatation of premises. Corrected by: July 20, 2022.

Observation: Exhaust hood vent observed to have built-up of grease.
Corrective Action(s): Clean and sanitize aforementioned areas. Ensure to review facility's Sanitation Plan. Corrected by: July 20, 2022.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Undercounter cooler at the front servicing area measured at 20.9C air ambient temperature. Stand-up cooler in the back kitchen next to the dishwasher measured at 21C air ambient temperature. Handwashing sink basin in the kitchen nearest the front enterance observed to be taped with duck tape as it was cracked. Low-temperature dishwasher measured at 10ppm chlorine.
Corrective Action(s): Service the cooling units to hold an air ambient temperature of 4C or lower and service the handwashing sink basin to ensure free of cracks. Corrected by: July 8, 2022.

Service the low-temperature dishwasher to measure at 50ppm chlorine. Corrected at the time of inspection.

Routine Inspection conducted today.

Stand-up freezer, chest freezers measured at -18C. Stand-up cooler located nearest the back door measured at 4C. Preparation coolers measured at 4C or lower. Front sanitizer bucket measured at 100ppm chlorine.
