Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food - pizza toppings including cheese, cut vegetables, ham, seasoned chicken was stored in pizza prep cooler at an ambient temperature of 12C. Operator stated that the food was moved from walk in cooler to prep cooler after store opening (less than 2 hours). The internal temperature of food products ranged between 8C to 11C. All food products were moved to second prep cooler and stored at a temperature below 4C.
Corrective Action(s): Ensure that all cold potentially hazardous food are stored at an internal temperature of at least 4C or less.

Observation (CORRECTED DURING INSPECTION): A container of boiled potatoes were stored directly on the floor in walk in cooler. Staff moved the container to a shelf.
Corrective Action(s): Ensure that all food products are stored at least 6 inches off the floor.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Pizza prep cooler was not functioning properly and was recorded at an ambient temperature of 12C.
2. Seal of chest freezer (upstairs) is broken and worn out.
Corrective Action(s): 1. Ensure that the cooler is serviced and able to maintain an ambient temperature of at least 4C. Operator called the technician at the time of inspection.
2. Replace/repair the broken seal of chest freezer to ensure adequate air circulation within the freezer.

Comments

Routine inspection conducted at the facility and the following observations were made:

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler (x2) maintained at 4C
- All other coolers recorded at 4C or below except pizza prep cooler. See violation above.
- Chest freezers noted at -18C or below.
- White stand up freezer at -10C.
- Hot holding unit for pizza recorded above 60C.

Storage:
- All food products were found either in original packaging or covered inside coolers.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- 200ppm bleach solution recorded in spray bottle and sanitizer pails.
- 3 compartment dishwashing sink available both upstairs and downstairs. Drain plugs available and 100ppm bleach solution recorded in 3rd sink.
- Vents were recently serviced.
- General sanitation of the facility was satisfactory.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate (March 2023)
