Re-opening Inspection after Temporary Closure for Renovations

New Addition Brew Bar / Drinks Service:
-Hand wash sink has hot and cold running water, liquid soap and paper towels in dispensers
-Coolers for milk and milk products is less than 4C
-Ice machine contains newly made ice
-Ice machine inside has clean surfaces
-Ice scoop stored in sanitary manner, on the side of the ice machine in its own holder
-Sanitizer for surfaces: Quats is >200ppm
-Cloths available for sanitizing are submerged in 100ppm Chlorine for disinfection.
-No construction materials present or pending work orders that affect food preparation.
-Please ensure that all cleaning is completed, all surfaces are sanitized before opening.
-No construction dust or materials on floors, walls, ceilings
-Facility plans to have designated staff for drink prep and service; separate staff are assigned for cash handling.
-No signs of pests at the time of inspection
-Addition has been completed as per approved Floor Plans.

Existing Kitchen:
-Hand wash sinks are supplied with hot and cold running water, liquid soap and paper towels in dispensers
-Coolers in line prep are less than 4C.
-Freezers in line prep are less than -18C.
-Walk in cooler <4C.
-Walk in Freezer <-18C.
-All food items are new stock.
-No open food packaging remains from before/during closure
-Fryer area: vents and grills are free from food debris
-New oil in fryers, no previous oil stored from before/during closure
-Sanitizer for surfaces: Quats >200ppm
-Cloths submerged in sanitizing solution >100ppm Chlorine
-No signs of pests inside the facility at the time of inspection.
-Consult with pest control regarding prevention in garbage area.
-Garbage area appears to be free and clear of food debris.
