Observation (CORRECTED DURING INSPECTION): Hot-held meatballs had an internal temperature of 54C. The lid of the insert was not properly closed.
Corrective Action(s): Reheat meatballs to at least 74C, then place in properly covered insert in hot-holding unit. Corrected at time of inspection.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quat sanitizer solution available at 200 ppm in spray bottles and from dispenser at 3-compartment sink.
- 3-compartment sink maintained in sanitary condition. Sink plugs available.
- Coolers were measured at 4C or colder. Freezer measured at -21C.
- All other hot-held food items were measured at 60C or hotter.
- Temperature logs well maintained and up to date. Thermometers available for use.
- Food storage practices satisfactory
- Dry storage areas satisfactory
- General sanitation satisfactory.
