Observation (CORRECTED DURING INSPECTION): High-temperature dishwasher is not functioning during time of inspection. Staff stated that the dishwasher is scheduled for repair. All tea is served in single-use disposable cups. 3-compartment sink available with drain plugs and bleach.
Corrective Action(s): Clean and sanitize all dishes and equipment using the 3-compartment sink available with drain plugs and bleach until the dishwasher is verified to be functioning by the Environmental Health Officer. Ensure bleach sanitizer in third compartment is measured at 100 ppm chlorine concentration with test strip.

Observation: High temperature dishwasher not functioning during time of inspection to sanitize equipment. Staff stated that the dishwasher has not been working for a few days.
Corrective Action(s): Repair dishwasher immediately to ensure it is measured at minimum final rinse temperature of 71'C at the plate surface to properly sanitize all equipment. Use the 3-compartment sink method to clean and sanitize all dishes and equipment.

- Inspection conducted with Practicum Student Environmental Health Officer

Observations:
- All coolers at or below 4'C
- All freezers at or below -18'C
-*NOTE: display cooler at front service area is not functioning and not in use for potentially hazardous storage
- No hot-holding on site
- General sanitation of premise is good during inspection
- Hand washing stations are supplied with hot and cold running water, liquid soap, and paper towel
*REMINDER: do not store any items in the hand washing sink basin to ensure staff are washing their hands at adequate frequency
- Bleach sanitizer in bucket with wiping cloth measured at 200 ppm chlorine concentration with test strip
- All food is stored at least 6 inches off the floor and covered
- Chemicals are stored away from food
- Equipment is stored in a sanitary manner
- Ice machine observed in sanitary condition with scoop placed outside the machine
- Bubble tea pearls are held at room temperature for 3 hours. Time stamp label available on bubble tea container. (Time tracking in place)
- FOODSAFE Level 1 trained staff available on site
- Permit posted in a conspicuous location on site
