Observation: 1) There was hot water at the start of the inspection but the premises ran out of hot water within half an hour. This is not acceptable.

2) There were no sink plugs at the 3-compartment sink.
Corrective Action(s): 1) Get a larger hot water tank as discussed.

2) Get sink plugs and ensure you're following the 3-compartment method of dishwashing.

Observation: Flies observed inside the kitchen.
Corrective Action(s): Keep the front and back doors closed at all times. Get some glue traps for the flies (do not hang these over food prep areas).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The sliding door cooler in the front was at 11 degC. All PHF's were discarded. Get this fridge fixed. Operator has other working fridges that are currently empty and can be used for food storage.
Corrective Action(s): Don't store PHF's in this cooler until it can maintain a temperature of 4 degC or below.

Comments

-All other working coolers are under 4 degC
-Freezers are below -18degC
-Food's prepared then transported and reheated on-site prior to being served.
-Bleach is on-site
-Orkin pest control is still on contract. Last service report was from July 17, 2018. No concerns noted.
-Both hand sinks are fully equipped.
-Hot water tank appears to be 40 gallon. This business is not a restaurant and he operator comes into the premises to do food prep when they've been hired for events. All dishware (plates, cups/glasses, cutlery) for events are rented and returned for washing/sanitizing to the supplier.
-As discussed, your FS level 1 certificate will expire on July 29, 2018. The Refresher course can be taken through www.foodsafe.ca.
